The answer could be as simple as Anakin filming all these training videos back-to-back for Ahsoka to have throughout the duration of the Clone Wars. Ahsoka's words do, indeed, drip with deep regret, but it could simply be from her not utilizing these training videos more often, or for the way she's viewed Anakin ever since she discovered he was Darth Vader.
