I have made this chicken more times than I can count. If you do not have leeks just use any onions or shallots you have. Makes a great gravy. I season it differently and use the meat in curry salads and other dishes according to the spice or just slice and serve with a pan gravy. Delicious. Easy. Fast.Really, really good recipe and easy. The chicken was really tasty and while I only had 2 leeks, they were really caramelized and delicious.

Heating the pan, salting the chicken and letting it dry out. Lightly oiling it before baking.
