¾ tsp. vanilla extractSet a fine-mesh strainer over a large bowl. Place durian in the strainer and, using a silicone spatula, press on the fruit to force it through the strainer and into the bowl. Whisk in the condensed milk, vanilla, and salt and set aside.
To a medium bowl or the bowl of a stand mixer fitted with the whip attachment, add the heavy cream and beat just to stiff peaks. Using a silicone spatula, fold about a third of the whipped cream into the durian mixture to lighten it, then fold in the remaining whipped cream until just incorporated.
