There, street vendors sold dishes like chana chaat, an explosion of sweet and savory flavors made using chickpeas, chutney and yogurt, near the shore of the Arabian Sea.

Abbas, an electrical engineer-turned-chef, said that in addition to private orders, he now makes iftar meals for his mosque, which provides food to congregants and the needy. “You make money … all year round, but I’m glad that I have this opportunity to cook for customers as well as charitable work,” he said.
