“I joined the project in November and it was always going to be a precinct,” says Hunter, who is a partner in the project and director of restaurant operations. The restaurant will have 60 seats on the ground level and lounge seating for between 20 and 30 on a mezzanine level, which will also have two private dining rooms – one for 10 people, a second for 40.
Hunter is coming off a six-year stint with Otto Brisbane, where he oversaw one of the best wine lists in the city, so it’s perhaps no surprise Tama is getting a similar treatment.
