Spring Valley-based Cali BBQ intent on doing 'slow food — fast' while becoming one of San Diego's tastiest barbecue options
Cali BBQ will fire up the Old Hickory pits at its Spring Valley restaurant sometime Friday night.
“It’s great to have an in-person experience and come to the restaurant, to see our pits, to watch the process,” said Walchef, a San Diego native. “But some people don’t care. They need their time. ... The two Cali BBQ stands at Snapdragon — one on the north end and one on the east side — also offer a brisket sandwich and pulled pork nachos .Cali BBQ’s origin story starts in 2008, when Walchef purchased a failing breakfast business in Spring Valley.“We started getting all kinds of requests from Little League and Pop Warner to help raise money,” Walchef said.“An amateur barbecue contest,” Walchef said. “That’s what all the coaches wanted to do.
“He was the pit master,” Walchef said. “We trusted in him to pick the right meats, pick the right seasonings, develop our own rubs, develop our own sauces.” In addition to the original location in Spring Valley there also are “ghost kitchens” in Barrio Logan and near SDSU, where customers can order food for takeout or delivery.
