A snap to prepare and a relatively short ingredient list, but the flavor is fantastic. Each chicken piece needs about 1 tsp of curry paste, if you are adjusting the amount used .Love this dish! Easy and flavorful-definitely up the curry to give it more of a kick!!I really like Anna's recipes as a general rule because most everything she does is very forgiving and substitution-friendly. This recipe is not an exception, and is a winner on its own.
Next time I will increase the amount of the curry paste rub on the chicken for a little more pronounced flavor. The only ingredient I don't commonly have in the house are the peppadews, but I improvised this time with a small jar of roasted red peppers cut in large dice, drained and tossed with just a tiny bit of sugar . This one is a keeper!It seemed to lack a little something. I don't know if the green curry i used was a little bland . The peppers were a nice flavor.
