Nothing says Mardi Gras like a purple, green, and gold king cake in the middle of a table—preferably with the knife stored inside the box for easy all-day snacking.

. Or a shot of king cake vodka. Perhaps a savory king cake made of boudin and topped with a cheesy crawfish sauce. These king-cake-adjacent foods may seem blasphemous to many Louisiana residents, but they’re part of the Carnival landscape created by many generations of boisterous celebration.

My earliest memories of king cake are from 1992, when I was in first grade at McDonogh 39 in New Orleans. One day during Carnival we came back from lunch and each had a piece of king cake on our desks. We immediately started trading with each other to get our favorite colors, some trying to get the. Our teacher, Mrs. Comeaux, told us that the one who found the baby was the one whose family was responsible for buying the class king cake next week. We didn’t hear that.

After several ensuing decades of king cake scholarship, I’m like a mechanic on the highway in the country, using all my senses to know if a king cake is good.

Maybe a little icing.While many assume that the baby figurine represents baby Jesus, since the start of Carnival season is the day the three wise men are said to have arrived in Bethlehem, this isn’t quite the full story.
