It has a strong anise-like scent and flavor, making it polarizing for some.The portion of the fennel plant that we typically eat is actually a bulb that grows underground.
The green stalks are too tough and fibrous to eat, but the fronds are edible and happen to be quite tasty as a garnish or part of a salad. Look for fennel bulbs that are firm and tight. If sold with the tops attached , make sure that the fronds are healthy-looking and vibrantly green, with no signs of browning.Keep your fennel in the crisper drawer of the fridge; it'll keep well for a few weeks.
