Russell Max Simon watched inflation play out in the cost of the avocados he likes to put on top of his breakfast. A 41-year-old marketing consultant in Rumney, N.H., Mr. Simon was dismayed to see their price climb from $1 each in early 2021 to $2.50 one year later.
