At my last job, I had a coworker who would march into the office every year when the weather started getting warmer and announce, "THIS is the year I take up canning." Her dreams were big, her intentions true, and her flavor ideas totally inspired, but when autumn rolled around, she inevitably still hadn't taken the plunge. "Okay," she'd amend, "NEXT year is my year."and preserving is a daunting task, especially for someone who's never done it before. If science wasn't your favorite class, a kitchen project involving precise temperatures, pH levels, and sterilization techniques can seem like a scary proposition.
"If you are new to canning or preserving," Champagne says, "the best advice I can give you is to keep it simple. Start with delicious local produce that is in season, and the flavor will shine through in your preserves." She notes that you can always begin by making small batches of jams or preserves to keep in your refrigerator and work your way up to full hot water bath canning.
Most of all, says Champagne, preserving is about trying something new. "Get adventurous if you are the adventurous type!" she says. "I always have a disco ball hanging in our commercial kitchen, to remind us all to dance and have fun while we are working with food. It's important!"
