When we decided to grow, our biggest expense was building teams that are superstars,” she said. “We have people in the prime of their careers and the best at what they do. After Covid we build this race car team that can win the Le Mans. You can serve quality food but if the service is substandard, you’ll never get through it.”
Mandito’s arrives at a time of opportunity for Palacios Murphy which this year marks the 45th anniversary of the beloved Armandos, a milestone to be sure. And while the city’s dining scene has changed tremendously in four decades, there are important constants that haven’t. Customers continue to want reliable, unchanging standards when it comes to their dining preferences and habits. Menu items at Armandos, the Palacios team has learned, are not to be toyed with.
