Every year over Christmas salmonella outbreaks emerge from poorly prepared and stored food | kaubo
Health authorities are warning people about salmonella food poisoning over the festive season, with 168 cases reported already this month in NSW.
Cross-contamination occurs when salmonella spreads to ready-to-eat food, for instance by cutting food with a contaminated knife or via the hands of an infected food handler. “It is also much safer to use commercially pasteurised eggs rather than raw eggs in ready-to-eat products such as desserts and dressings,” Dr Szabo said.
