The Frydenlunds won over Houston with its take on Nashville hot chicken. Mico's Hot Chicken in the Heights is kickstarting the food trend in town.
"We did pop-ups at Sunday farmers market and the Galveston Mardi Gras festival," she said."We actually lost $7,000 because you have to pay to get there. We ended up getting a bad spot and lost money."Mico's success, according to the Frydenlunds, could be largely attributed to the"chicken sandwich wars" between Chick-fil-A and Popeye's.

The Frydenlunds opened their first brick-and-mortar in March 2020 along North Durham Drive in the Heights area. Strangely enough, the pandemic ended up working in the family's favor. As Harris County tightened COVID-19 restrictions, Mico's had already found itself in a prime position to take on the new economy.
