Add flours and continue to mix until no more flour is visible, and then stop. Tip the dough onto your work bench and knead until smooth. Remove the dough from the fridge and, using the tip of a sharp knife, cut the dough into monster mouth shapes. Aim for rounded rectangles, kidney-bean shapes and abstract ovals, each roughly the size of a jumbo egg. Take away the scraps and re-roll to make more.Immediately after removing the biscuits from the oven, holding a skewer horizontally, push it into the side of a biscuit about 2cm deep. Repeat with all the biscuits, working quickly while they are still hot. Leave them to cool.
