San Francisco’s appetite for fresh and delicious Greek comforts expands north.
Banking on the Bay Area’s appetite for fresh and delicious Greek comforts such as crackling rotisserie meats served with all the pickled accompaniments, yogurt sauces and feta cheese toppings, Souvla is expanding its reach with a new location at the Marin Country Mart in Larkspur this summer.
“Every week, we always get emails and DMs asking us to open up in different places. Marin was very compelling because of the co-tenancy that exists in that center with Hog Island and Farmshop and Rustic Bakery and Shake Shack,” said Souvla founder and CEO Charles Bililies. “There's also going to be several really phenomenal San Francisco brands and operators coming to the center this year. So I feel strongly that it'll be the preeminent dining destination in Marin County.
For the past eight years, Souvla held onto its role as a beloved Greek staple for casual lunch dates or quick bites to-go with four locations throughout San Francisco’s NoPa, Mission and Marina neighborhoods, as well as one delivery-only kitchen in the SoMa neighborhood. Although Souvla’s menu takes certain liberties with blending traditional Greek flavors for the California palate, Bililies told SFGATE there’s one more traditional menu item that still conjures fond memories from his childhood, and it’s a dish he often shares with friends and family.“As the mood strikes, I’m personally a big fan of our avgolemono soup. It is the ultimate in comfort food,” Bililies said.
It’s a dish that stays true to classic ingredients with a chicken stock base that’s thickened with egg and simmered with lemon juice, white rice and naturally raised chicken. Bililies said to think of avgolemono as a cross between a matzo ball soup and egg drop soup, but with lots of zing.
