Chives for servingPeel and slice the Jerusalem artichokes, reserving 500g of peels. Do this quickly; otherwise the artichokes can discolour.
Heat a large shallow pan, add butter and fry the artichokes, onion, celery and garlic, without browning. Add the lemon thyme and bay leaf, chicken stock and water. Bring to a gentle simmer and cook until the vegetables are tender.Strain the vegetables, reserving the liquid, and blend in a blender or Vitamix. Slowly add the liquid back in until you have a nice pouring consistency. Season with lemon juice and sea salt. You can do up to this point the day before serving.
Cut the brioche into a 2cm dice. Melt the butter in a small pan and gently cook the croutons until golden. Drain and place on paper towel to absorb excess butter. Strain the infused cream, discarding the peel, and whip until it holds firm peaks. Gently fold in salt and lemon juice to taste. To serve, place a layer of croutons and walnuts on the base of each warm bowl, top with a scoop of artichoke cream and garnish with chives. Heat the soup and serve in jugs, to pour at the table.
