From unconventional grains to a boom in booze-free booze and a new focus on diversity and inclusion, change is afoot in the drinks business.
This has been a year of drinking – and thinking – differently. Here are three trends that gathered steam in 2021, promising to shape the industry and the way we drink in fascinating ways into the future.One of the most exciting trends in drinks is the growing interest among Western distillers/winemakers in producing drinks inspired by Asia – rice-based sake and shochu, sorghum-based baijiu – rather than just sticking to the European traditions of gin, whisky or brandy.
As well as a new gin called Neo that is full of the punchy flavours of yuzu, shincha and shiso, the distillery this year also released the first batch of Yuzushu , a stunning, cloudy yellow sweet/sour drink based on shochu spirit, distilled from koji-fermented barley. That first batch of Yuzushu has sold out unfortunately – but you can sign up for future releases atEarlier this year, the makers of Tasmania’s first baijiu, Sanyou, sent me a small tasting sample.
Not surprisingly, many other companies have jumped on the booze-free bandwagon this year. Here’s three that I would happily drink again if for some inexplicable reason I decided to have an alcohol-free day.
