People don't realize how much personal sacrifice the restaurant business requires."The first year, we both worked six days a week and 12 hour per day," said Kaytrin. Restaurant owners give up their weekends and attending family events, such as birthdays and holidays.
Kaytrin manages the back of the house, including hiring the kitchen team, ensuring the restaurant is up to code with food safety, and even jumping in on the action when the kitchen is very busy. She also manages the front of the house, including scheduling the team and training."I've worked almost every position in restaurants, including kitchen shifts, serving shifts, bussing shifts, and hostess shifts," said Kaytrin.
"I also watched MasterClass videos including one by Anna Wintour [Editor-in-Chief of Vogue and Global Chief Content Officer for Condé Nast] on how to run a proper meeting," says Kaytrin."I don't have expertise in finance, and Willard is very hands-on and always there when needed."
