Turnover and training are also a big deal, Rovella said. A barista trainer herself, she doesn’t think new employees are given enough time to learn before they’re on their own.

Safety is also an issue, Nappi said. Workers are often exposed to COVID-19 and become sick. Omicron has only made the situation worse, he said.
