But the world giveth and taketh away, and before Colagreco could make the most of his triumph, France closed its borders and went into lockdown.“That was hard” he says. “We were the best restaurant in the world, but the world disappeared.” “We want to work with people who share our vision for the regeneration of the soil and the water, who are reducing their emissions and their use of plastics,” says Colagreco, who was named UNESCO Goodwill Ambassador for Biodiversity in November last year.As host restaurant, The Gantry ticks all the boxes – glittering harbour views, an ambitious young chef in Rhys Connell, and a reputation for supporting ethical producers and regenerative farmers that stretches back more than 10 years.

They will have to adapt and be creative.

The Gantry residency will feature Colagreco’s cosmos flowers, kangaroo tartare and red berry vinaigrette.
