I love, love, love this recipe! I've made it half a dozen times, probably never once exactly as written. But I always use some sort of onion, some amount of bacon, some wine, some greens, some tomatoes, some sort of chicken..but I follow the steps and timing very closely. I cook a lot and have my rhythm which generally leans towards the practical rather than the gourmet.
I decided to pay attention to this recipe, and it magnificently paid off! This recipe reminds me how much paying attention to the timing of the things in the pot makes a difference in flavor. Fantastic with fried polenta, pasta, on it's own, but truly best with good bread . This is really a recipe that can be health-food, a quick fix, or gourmet..depending on the chef's choice or intention. So delicious...
