I've just made this for myself for dinner. It smells and looks delicious! I can't wait to eat it. I scaled it down as it was just me eating it. I also used ready cooked and peeled king prawns and it still looks like it had worked well. If I make this for others I'll stick to the original recipe and use raw prawns.Excellent. I followed the suggestions and put a bit more honey. It was delicious and the guests all loved the dish.
I think just about any chile would be fine, to adjust to your own spice preference. I could think of a lot of riffs on this: grill the shrimp, over rice instead of noodles, use Thai basil, add some sliced napa cabbage..........As with a reviewer, I also used only 1/2 of the Serrano Chile - next time I would use the whole one. I thought it needed a bit more honey as it was on the tangy side from the lime juice.
