One avenue to sell his eggs was through a website called Prom Coast Food Collective, which only sold local produce from the area.But after five years, the economic climate post-COVID presented real challenges for Mr Ellis, and he stopped farming. She believes the current economic climate has meant families are now forced to prioritise "survival" over their philosophy on food.
In West Gippsland, a greengrocer with a similar ethos has survived sudden economic challenges after COVID. "I think what's happened is people realise that they can actually take places like us for granted," Ms Hoare said.
