It boasts immaculate accommodation, a polo field and one of south-east Queensland’s best regional restaurants.
I remember the last time I travelled through Beechmont. Like most young Queenslanders, I was there to hike.
Thankfully, the scenery hasn’t much changed in 20 or so years. We get plenty of time to admire it as we climb the winding Beechmont Road – stuck behind a van full of hikers.We turn onto Binna Burra Road, which ends at major a trailhead for the national park. But we’re not headed to the trailhead because we’re not here to hike.We’ve arrived at Beechmont Estate and this luxury retreat is a total change of pace from the more traditional Beechmont or Binna Burra experience.
We check in and are whisked by golf cart to our cabin for the night. Along the way, we’re given a crash course in the property’s short history. Bath-born Furley has done time in some beautiful parts of the world, working in that city’s Michelin-starred Olive Tree restaurant and also spending four years as a private chef travelling across Europe and the Mediterranean.
“Sometimes I’ll be working, and I’ll look around at the landscape, and I’ll forget I’m in Australia. Then you’re reminded by some crazy wildlife that appears. But I’m lucky to be here, on the other side of the world, doing what I do.” There’s a stack of skill in this food, which utilises local producers and suppliers such as Tommerup’s Dairy, Miami Fish Market and Towri Sheep Cheeses, but it’s never not approachable.Chef Simon Furley utilises local suppliers to create stunning farm-to-table meals.
