This vanilla fudge has a delicate flavor and aroma and is just ridiculously, deliciously creamy.
Grease an 8- by 8-inch pan lightly with nonstick spray. Line the pan with parchment paper . Butter the top of the parchment with 1 tablespoon of butter. Butter the inside of an electric mixer bowl with the remaining butter.
Cook, stirring frequently, until the temperature reads 235° F on the thermometer. Stirring prevents the mixture from scorching on the base of the pan during cooking. Once you've reached the proper temperature, carefully fish out the vanilla bean with a pair of tongs or a fork and discard it. Allow the mixture to cool, undisturbed until it reads 120° F on the thermometer. Remove the thermometer and attach the bowl to an electric mixer fitted with the paddle attachment.

Savory Zucchini Bread Recipe on Food52Zucchini bread is a godsend during peak summer when zucchini is everywhere, but I often find the loaves disappointing: sweet, dense, and one-note in flavor. So I ditched the sugar, raisins, and other sweet add-ins and created a savory rendition that’s exactly to my taste. It’s flecked with chopped Castelvetrano olives, manchego, almonds, and smoky paprika, kind of like it summered in Spain! Olive oil reinforces its savoriness, and a little rye flour boosts its texture and flavor. The bread can be baked in either a 10-inch cast-iron skillet (start checking for doneness after about 30 minutes) or a standard loaf pan. I love serving it plain or lightly toasted with salted butter—either as a snack or part of a meal.

Food52 x Staub Turmeric Cookware CollectionHeads up! Additional promotions do not apply to this item. To celebrate our 10th anniversary, we’re rolling out new, limited-edition products in the coming months. Better than a party favor? You bet. Home chefs and Michelin-starred restaurants alike are big fans of Staub’s iconic, made-in-France cookware, and we can see why: The pre-seasoned cast iron interior is aces at browning and retaining heat, not to mention a cinch to clean. It really shines on any cooking surface, too, including induction. And with that colorful, chip-resistant enamel coating, they're ready to waltz right from oven to table. (Did we mention every piece undergoes over 100 inspection points to ensure it meets top-quality standards? It does.) Last year, we teamed up with Staub to bring you the classic cocotte in this limited-edition turmeric color—and the crowds went wild. You all loved the look so much, we decided to bring it back to the Shop in six of your favorite silhouettes. Whether you're on the hunt for the perfect pan, want to whip up the fluffiest-ever grains with the stovetop rice cooker, or wanna take the grilling indoors with the double-handled grill pan, there’s something for everyone.
