Four 800-litre copper stills have been installed, to produce the gins and whiskies that power the bar’s sophisticated cocktail list. “We might be the first legal distillers here for over a hundred years,” he laughs.
Doran sees that as a metaphor for The Rocks. “It’s always been a fantastic area, but has been massively underutilised. Now it’s finally becoming a real destination for everyone who lives in Sydney.” “At the back we link on to Greenway Lane and The Cookout, where everyone used to grill their own steaks on the barbecue,” he says. “We’re turning that into a full working kitchen with a luxurious outdoor terrace dining room – white tablecloths, murals, plants, dry-aged meats, full service, 500-bottle wine list. Super-romantic, and kind of fancy.”
