It wasn’t until they re-opened the pubs in June that you could hear the Hallelujah Chorus spread across the land - Italy has its trattoria, France its bistro, Japan its izakaya and Singapore its hawker stall, and we have the pub

The steps back to dining out have been unsteady, like a child learning to walk. The first encouraging sign was being allowed to gather in numbers of up to 10 in newly reopened restaurants, even if it did feel like being out on a very slow Monday night in the middle of winter.

Then, when maximum numbers went up, dining out felt as if it was getting its jive back. Lights came back on. Chatter recommenced. Glasses clinked. Food was cooked by someone other than yourself. Restaurant owners smiled again, and called themselves out for being “rusty”.It wasn’t until they re-opened the pubs in June that you could hear thespread across the land.

People who hadn’t felt comfortable enough to dine in a restaurant went straight down the pub, because there’s something about pubs that makes everyone feel safe and secure. Italy has its trattoria, France its bistro, Japan its izakaya and Singapore its hawker stall – and we have the pub. Pubs are welcoming, familiar, neighbourly and full of locals. You know where you stand when you’re in a pub .And you know the food will be the food of the people.

Note the mozzarella and pickle croquette at The Lincoln in Melbourne’s Carlton and the African chicken curry with eggplant and okra at The Prince in St Kilda. Or the katsu fish sando at Sydney’s The Longueville or the chicken satay roti taco at The Henson in Marrickville. It’s still the food of the people, but these days, the people are all different, and pub food changes effortlessly to reflect and respect that. That’s really why we love pubs so much.
